Preheat the oven to 350 F. Lightly oil an 8” square baking pan.
In a medium bowl, combine the dry ingredients: quick-cooking oats, rolled oats, brown sugar, baking powder, ground cinnamon, salt, and ground ginger. Set this bowl aside.
In a small bowl, combine the flax meal and warm water. Set this bowl aside.
In a small bowl, combine the almond milk, maple syrup and melted soy margarine.
Combine the mixtures in the two small bowls with your dry ingredients and mix.
Add the blueberries and chopped apples to the bowl and mix.
Evenly spread the mixture in your prepped baking pan and bake for 35 minutes. The oatmeal is cooked when a toothpick can be inserted in the center and removed clean. Cut the oatmeal as desired.
