  • 1 cup almond milk
  • 1 cup rolled oats
  • 1/2 cup brown sugar, packed
  • 1/2 cup fresh blueberries
  • 1/2 tsp ground cinnamon
  • 1/3 cup maple syrup
  • 1/3 cup peeled chopped apples
  • 1/4 cup melted soy margarine
  • 1/4 cup warm water
  • 1/4 tsp ground ginger
  • 2 cups quick-cooking oats
  • 2 tsp baking powder
  • 3 tbsp flax meal
  • 3/4 tsp salt


  • Preheat the oven to 350 F. Lightly oil an 8” square baking pan.
  • In a medium bowl, combine the dry ingredients: quick-cooking oats, rolled oats, brown sugar, baking powder, ground cinnamon, salt, and ground ginger. Set this bowl aside.
  • In a small bowl, combine the flax meal and warm water. Set this bowl aside.
  • In a small bowl, combine the almond milk, maple syrup and melted soy margarine.
  • Combine the mixtures in the two small bowls with your dry ingredients and mix.
  • Add the blueberries and chopped apples to the bowl and mix.
  • Evenly spread the mixture in your prepped baking pan and bake for 35 minutes. The oatmeal is cooked when a toothpick can be inserted in the center and removed clean. Cut the oatmeal as desired.
