Vegan Potato Fritters Recipe
Ingredients
- 3/4 cup red lentils
- 1 small red onion, chopped
- 2 cloves of garlic
- 2 potatoes
- 1 carrot
- 5 tbsp all-purpose flour
- 1/2 tsp smoked paprika powder
- 1 tsp marjoram
Sriracha Mayonnaise Ingredients
- 3 tbsp vegan mayonnaise
- 1 tsp tomato paste
- 1 tsp garlic powder
- 1/2 tsp smoked paprika powder
- salt and pepper, to taste

Instructions
- To prepare, cook the red lintels as instructed on the packaging. Peel and grate the potatoes and carrot.
- In a large bowl, combine and mix the potatoes, carrot, red lentils, garlic, onion, flour and spices.
- In a large pan, heat oil. Add about 1.5 tablespoons for each fritter then cook them on medium heat for approximately 3-4 minutes per side. (Alternatively, these can be baked in the oven for 10 minutes on each side).
- Combine all the ingredients and stir well to create the siracha mayonnaise.
