I’ve read recently that potatoes are the most versatile food in the world – they’re staples in all types of cuisines: Irish, Indian, Spanish and Eastern Europe. And potatoes can be cooked in a ton of different ways: baked, steamed, fried, mashed, stuffed, roasted or boiled. So, after thinking about it… I agree, potatoes really are the most versatile food in the world. In this vegan potato fritters recipe, we combine potatoes with red lintels, carrots and onions to create crispy, flavorful potato fritters. These tasty potato fritters will pair perfectly with scrambles and omelets!

Why you’ll love this vegan potato fritters recipe:

  • This recipe is very easy to make and takes just 25 minutes. They contain 18 grams of carbs, 5 grams of protein, 3 grams of fiber and they’re a good source of potassium, calcium and vitamin C.
  • One of the problems some people face when making vegan potato fritters, is that they don’t hold together as well as potato fritters made with eggs. The ingredients in this recipe combine perfectly to create a sturdy potato fritter that won’t fall apart when dipping.

How to make these potato fritters perfect:

  • Go half and half: In this recipe, you can substitute half of the carrots for zucchini, if preferred. Zucchini will add a healthy dose of vitamin A, vitamin C and manganese without sacrificing the texture of the fritters.
  • Use dipping sauce of your choice: I created a creamy sriracha sauce to dip these potato fritters in – because I love hot sauce. You could also dip them in ketchup, smoky sauce, vegan mayo or chili sauce, to name just a few alternatives.
  • Cover these fritters with cheese: While on the skillet, you can cover the tops of these potato fritters with shredded vegan-friendly cheese to add additional flavor.
