  • 5-7 oz pre-baked tofu, cubbed
  • 1 cup frozen veggies of choice
  • 2 cups brown rice, cooked
  • 1/4-1/2 cup vegetable broth
  • 1 tsp sesame seeds
  • 4 scallion stalks, chopped
  • 2 tbsp tamari (or soy sauce)
  • 1/4 cup kimchi


  • Prepare 2 cups of rice as described on the product packaging. Chop scallion stalks and vegetable of choice, if necessary.
  • In a skillet over low-medium heat, combine the brown rice, vegetable broth, scallion stalks, veggies and tamari.
  • Add tofu and combine for 1-2 minutes.
  • Add kimchi and combine for 1-2 minutes.
  • Remove from skillet and place in a bowl. Top with sesame seeds.
