Vegan Kimchi Fried Rice Recipe
Ingredients
- 5-7 oz pre-baked tofu, cubbed
- 1 cup frozen veggies of choice
- 2 cups brown rice, cooked
- 1/4-1/2 cup vegetable broth
- 1 tsp sesame seeds
- 4 scallion stalks, chopped
- 2 tbsp tamari (or soy sauce)
- 1/4 cup kimchi
Instructions
- Prepare 2 cups of rice as described on the product packaging. Chop scallion stalks and vegetable of choice, if necessary.
- In a skillet over low-medium heat, combine the brown rice, vegetable broth, scallion stalks, veggies and tamari.
- Add tofu and combine for 1-2 minutes.
- Add kimchi and combine for 1-2 minutes.
- Remove from skillet and place in a bowl. Top with sesame seeds.
