This recipe perfectly blends the spicy jerk and crispy tofu with a sweet pineapple salsa.

Ingredients
  

  • 1 cup rice
  • 10 oz firm or extra-firm tofu, diced
  • 1 tbsp jerk seasoning
  • 2 tbsp vegetable oil
  • 1 bunch broccoli
  • 1 tsp olive oil
  • 1/2 pineapple, chopped
  • zest and juice of 1 lime
  • 1 small red chili, diced
  • salt to taste

Instructions
 

  • Cook the rice as directed on the product packaging.
  • In a small bowl, combine the tofu, jerk seasoning and vegetable oil.
  • Heat a skillet on high heat. Place to tofu in the skillet and crisp each side for approximately one minute, or until each side is crisp.
  • Toss the broccoli with olive oil and roast in the oven for 10 minutes, or until the broccoli is crispy.
  • Ina bowl, combine the pineapple, zest and lime juice, red chili and salt to create the salsa.
  • Assemble the bowls by evenly distributing the rice, tofu, broccoli and salsa. Or place in meal prep containers and enjoy later.
