There is something about fall and winter weather that just makes me think “it’s time for cinnamon!” Which is why I’ve whipped up this vegan cinnamon roll pancake recipe. It’s just that time of the year, right? This vegan cinnamon roll pancakes recipe is absolutely perfect for bringing the family to the kitchen table on the weekend to enjoy a warm, filling meal together.

  • This cinnamon filling can be added to literally any pancake recipe. If you have a favorite recipe, you can just create the cinnamon filling and add a swirl to what you already love.

  • Be patient: Making cinnamon swirls in pancake after pancake takes a bit of skill and a bit of patience. Remember the cinnamon swirls don’t have to be absolutely perfect, they’re just astatically pleasing. When it comes to taste though, all that matters is that you get the cinnamon in the batter!
  • Add some chocolate: If you’re a fan of chocolate chip pancakes, you might as well go ahead and turn these into chocolate chip cinnamon roll pancakes. What could it hurt? (Hint: nothing.)
  • Use a piping bag: If you’re a baker, then you probably have a piping bag to use to add the cinnamon to the pancake batter. If not, you can create a piping bag-like tool with a zip lock bag by cutting a small hole in one bottom corner, and pushing the mixture out of it.

  • 2 tbsp coconut oil
  • 1 tsp grapeseed oil
  • 1 1/2 tbsp vanilla almond milk
  • 1 1/4 tsp ground cinnamon
  • 1/4 cup brown sugar
  • 1 1/4 cup all-purpose flour
  • 1 1/2 tbsp cane sugar (or coconut sugar)
  • 2 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp salt
  • maple syrup


  • In a bowl, combine the coconut oil, grapeseed oil, vanilla almond milk, 1 tsp cinnamon and brown sugar.
  • Transfer the mixture to a decorating baggie or plastic bag.
  • In a large bowl, combine the flour, sugar, baking powder, ¼ cinnamon and salt.
  • Add the almond milk and grapeseed oil then combine.
  • Coat a skillet with oil on low-medium heat. Scoop the mixture onto the skillet to form a pancake. Add the cinnamon from the decorating/plastic bag. Bring the pancake to a golden brown, then flip to cook both sides evenly.
  • Repeat the cooking process to create the remaining pancakes.
  • Top with maple syrup and serve.
