This vegan chocolate chia pudding recipe hits the trifecta: it’s simple, delicious AND nutritious! If you eat store bought pudding, it’s time to ditch it! This recipe very likely the healthiest recipe I’ve ever made that doesn’t require any cooking. And it’s the perfect option for breakfast, dessert or as a snack.
What you’ll love about this vegan chocolate chia pudding recipe:
- This recipe is a great option for weight loss. Why? Because chia seeds expand nine times in your stomach which helps you feel fuller, longer. In turn, eating chia seeds is likely to reduce the urge to eat more. This pudding is also high in protein and fiber which further enhance its ability to help you feel fuller, longer.
- It’s perfect for meal prepping! The chia pudding will last for five to seven days in the refrigerator. If you store the pudding in single serving jars, it’s perfect for a grab-and-go breakfast or snack. The chia pudding can also be frozen, just thaw for a few hours or overnight in the refrigerator before eating it.
- Chia seeds are a superfood… and super nutritional. 1/4 cup of chia seeds gives you approximately 7.5 grams of protein, 15 grams of fiber and 179 mg of potassium.
How to make this chocolate chia pudding perfect:
- Be sure to combine the ingredients well: You’ll want to make sure you really combine the ingredients into a smooth pudding to avoid having any clumps. It’s a good idea to combine the ingredients and allow it to set for a few minutes, then give it another quick whisking.
- Consider using a blender: Blending the ingredients will give it a creamier texture than using a hand whisk to combine the ingredients. This is also a good option if you prefer the chia seeds in a powder form.
- Use your favorite plant-based milk: Chia seeds themselves don’t have any flavor, so this recipe will take on the flavor of the milk you decide to use and the cocoa powder. So, be sure to use whichever plant-based milk you enjoy the most!
