Vegan Chickpea Scramble Recipe

vegan chickpea scramble recipe

If you’re a former meat-eater like me, then expect this vegan chickpea scramble recipe to remind you of those old scrambled egg breakfasts. Chickpeas are, at least in my opinion, the closest natural food that vegans have to an egg and this recipe takes full advantage of their eggy-ness. But chickpeas are a more filling alternative to eggs. This recipe will definitely keep your hunger in check until lunch while only consisting of 233 calories. It doesn’t get better than this!

Why you’ll love this vegan chickpea scramble recipe:

  • If you’re looking for a home cooked breakfast, then this recipe checks all of the boxes: It’s quick and easy to make in just 20 minutes, it’s very nutritious and high in protein (thanks to the chickpeas) and it tastes fantastic. This is truly a healthy, tasty way to start your day.
  • Turmeric gives this recipe an edge. Not only does turmeric boost this recipe with its spicy flavor, it also gives it the added benefits of being anti-inflammatory and a digestive aid.

How to make this chickpea scramble perfect:

  • This recipe could definitely also work as a plate of scrambled chickpeas. However, I always make this recipe as a breakfast bowl. That way, I can fill it with other nutritious ingredients. Which, in this particular rendition of this recipe, I use avocado, onion and mixed greens. But you can use other toppings as preferred to make it your own. Cucumbers, peppers and cheeses are just a few of the great alternatives.
  • If you’re looking to spice this recipe up even more, try adding some diced chili or chili flakes to the onions while cooking.
  • If you want to add next-level nutrition to this recipe, consider adding healthy seeds: chia, sunflower and pumpkin seeds all make great additions!
