Ingredients
  

  • 15 oz chickpeas
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tbsp olive oil
  • 1/4 cup onion
  • 2 garlic cloves
  • mixed greens
  • handful of parsley
  • handful of cilantro
  • 1 avocado, sliced

Instructions
 

  • Prepare the chickpeas as directed on the product packaging.
  • In a bowl, mash the chickpeas with a fork.
  • Add salt and pepper to the bowl and combine.
  • Dice the onion and garlic cloves.
  • Coat a skillet with olive oil over low-medium heat. Add the diced onion and garlic cloves. Cook until light brown.
  • Add the chickpea mixture to the skillet. Sauté for about 5 minutes.
  • Place mixed greens in a bowl and top with the chickpea mixture. Top with a handful of parsley, cilantro and avocado slices, if desired.
