vegan banana oat pancakes recipe

There’s something about starting your day with a tasty, nutritious breakfast that just makes everything seem to go right. And while many of our breakfast recipes focus on meal-prep and grab-and-go options, it’s always nice to have a warm, wholesome breakfast when you have the time. Especially one that will bring the whole family around the breakfast table like these vegan banana oat pancakes will.

Why you’ll love vegan banana oat pancakes:

  • Cleaning up after this recipe is super easy. This recipe uses a blender to combine ingredients, which makes it a bit quicker to make and much easier clean up afterwards. Who doesn’t love that?
  • The pancakes will be super fluffy. These banana oat pancakes don’t use any oil, butter or dairy so to get the perfect fluff, we add baking soda to the mix. Just be careful to add the right amount of baking soda if you adjust this recipe for additional or fewer servings.
  • This recipe is very forgiving (as are most pancake recipes). You can substitute flours, plant milks and serving sizes quickly without affecting fluff or taste of the pancakes. The forgive-fulness of these pancakes also make them a great option for anyone who is new to cooking.

Helpful tips to make this banana oat pancake recipe:

  • Don’t make the batter too thin: If the batter is too thin (i.e. liquid-y) then the pancakes will come out thinner… which you definitely don’t want! Make the pancake batter on the thicker side and enjoy the fluffiness. This batter will probably be a bit thicker than you’re used to with most pancake recipes. Don’t be alarmed.
  • Don’t skip the toppings: Top these pancakes with your favorite fruit (I recommend blueberries or strawberries). Just add your favorite fruit to a micro-wave safe bowl and cover them with syrup. Heat them for a few seconds and then cover your pancakes. Applesauce, banana slices and even chocolate make other great options for topping them.
  • This recipe can be gluten-free: To make this recipe gluten-free, just replace the oats with buckwheat flour. Just keep in mind that you’ll likely have to use a bit more milk to create a batter with the perfect consistency – this is because buckwheat flour tends to be a bit thicker and stickier than most other flours.
  • These pancakes will cook like any other pancake: Just put the batter on the heated skillet, allow the batter for bubble and for the sides to stiffen a bit, then flip the pancake and allow it to cook for another 60 seconds or so. Try to resist the urge to ‘flatten’ the pancake and just let them get nice and fluffy!
