vegan baked oatmeal bars recipe

If you’re a member here, then you probably know that I’m a HUGE believer in always having breakfast bars and protein bars on hand. And if you’re someone who usually depends on convenience store bars for snacks, then I highly recommend stepping up your meal prepping game and giving baking your own fresh breakfast and protein bars a shot. This vegan baked oatmeal bars recipe is the perfect place to start! You’ll get ALL of the healthy nutritional benefits without any of the unhealthy (and unnecessary) preservatives, while saving money and having more control of the taste of your bars.

Here’s why you’ll love this vegan baked oatmeal bars recipe:

  • Time-friendly: They only take 10 minutes to prepare and less than 30 minutes to cook.
  • Easy to make: Mix, pour, bake… It doesn’t get any easier than that!
  • Grab and go: These bars are a perfect option for a grab and go breakfast option or to keep on hand and consumed as a snack.
  • Plenty of options: If you’re not a fan of blueberries or apples, you can easily replace them with your favorite fruits.

Here’s how to make these oatmeal bars perfect:

  • Use the right oats: It’s very important to use both quick cooking oats and rolled oats for this recipe to maintain the texture of the bars. Blending these different oats together will create the kind of chewy texture you’re expecting in your bars.
  • Add some syrup: If you’re enjoying these bars at home, you may want to try dipping them in maple syrup or drizzling maple syrup on top.
  • Allow the bars to cool completely: I know it can be hard to wait for a delicious meal or snack to cool and be ready to eat, but you’re definitely going to want to give these oatmeal bars time to cool completely. Be patient and let them cool, otherwise, they will be tough to handle and the texture will be much different.
  • Store the oatmeal bars in an airtight container: You can store these bars in the fridge or the freezer, but make sure they’re in an airtight container. In the fridge, these bars will stay fresh for about a week. In the freezer, these bars will stay fresh for two to three months. I wouldn’t store these bars at room temperature.
  • Heat before you eat: While the oatmeal bars can be consumed cold, they can also be reheated in the toaster oven or the microwave. Heating them will give them a crispy outside with a chewy inside. If you choose to heat them in a microwave, I recommend wrapping them in a wet paper towel and cooking them until warm – which usually takes 20 to 30 seconds.
