White Chocolate and Pea Protein Donut Recipe


  • 1 cup coconut flakes
  • ½ cup gluten-free flour
  • ½ tsp salt
  • ¾ cup sugar
  • 2 tbsp pea protein powder
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • Zest of 1 lemon
  • 3 oz. white chocolate (for the glaze)
  • 2 tablespoons sprinkles (for the glaze)


  • Preheat oven to 350 F
  • In a bowl, mix together the dry ingredients: coconut flakes, gluten free flour, salt, sugar, and pea protein powder
  • Whisk with a wire whisk and add in the almond milk, vanilla extract and water
  • Place the mixture in donut baking pans and bake for 17 minutes or until a toothpick can be cleanly removed
  • Remove the donuts and let them cool slightly
  • Melt the chocolate and dip them half way through then add sprinkles to the tops
