Polenta and Pea Protein Pancake Recipe


  • 1 cup gluten free flour
  • ½ cup polenta
  • 2 teaspoons baking powder
  • A pinch of salt
  • 2 tablespoons pea protein powder
  • 1 cup almond milk
  • ½ cup granulated sugar
  • 3 melted coconut oil
  • Zest and juice of ½ lemon
  • Vegan white chocolate


  • In a bowl, mix the gluten free flour, polenta, baking powder, pea protein powder and pinch of salt
  • Add in the almond milk, coconut oil, sugar and zest and juice of a ½ lemon
  • Mix until well incorporated and cook the pancakes in an oiled frying pan for about 2 to 3 minutes on each side
  • Drizzle white chocolate on top as desired
