Peanut Butter and Pea Protein Donut Recipe

Ingredients:

  • 1 cup almond flour

  • ½ cup coconut flour

  • A pinch of salt

  • 2 tablespoons pea protein powder

  • 2 teaspoons vanilla extract

  • ¾ cup sugar

  • 2 tablespoons coconut oil

  • 1 cup almond milk

  • 3 tablespoons peanut butter

  • 1 teaspoon baking powder

  • 3 oz. dark vegan chocolate (for topping)
  • 2 tablespoons coconut oil (for topping)
  • 3-4 tablespoons sprinkles (for topping)

    Directions:

    • Preheat the oven to 350 F
    • In a bowl, mix the almond flour, coconut flour, pinch of salt, pea protein powder and baking powder
    • Mix in the vanilla, sugar, almond milk, coconut oil and peanut butter
    • Place the mixture in donut baking pans and bake for 17 minutes or until a toothpick can be cleanly removed
    • Remove the donuts and let them cool slightly
    • Melt the chocolate and coconut oil in a bowl
    • Dip each donut in a chocolate glaze and cover with sprinkles as desired
