Mint Chocolate and Chia Protein Bars

Ingredients:

  • 1 1/2 cups of toasted sunflower seeds
  • 4 tablespoons of chia protein
  • 3 tablespoons cocoa powder
  • 2 pinches of sea salt
  • 4 tablespoons cocoa butter
  • 2 ripe bananas
  • A few drops of peppermint oil or 2−3 teaspoons of dried mint

Directions:

  • Blend one cup of sunflower seeds until finely chopped
  • Melt the cocoa butter in a small bowl
  • With a fork, mash the bananas
  • Place all of the ingredients into a bowl, then mix
  • Line baking pan with baking paper
  • Put the mixture in the baking pan and press it down
  • Freeze for one to two hours
  • Cut into bars or squares, as desired
