Ingredients:
- 1 cup coconut flour
- ¼ cup gluten-free flour
- 1 teaspoon baking powder
- A pinch of salt
- 2 tablespoons hemp protein powder
- 1 teaspoon vanilla extract
- 1 cup coconut milk
- ½ cup brown sugar
- 3 tablespoons vegetable oil
- 3 oz. fresh figs
Directions:
- In a bowl, mix the dry ingredients: coconut flour, gluten-free flour, baking powder, pinch of salt and hemp protein powder
- Mix in the vanilla extract, coconut milk and vegetable oil
- Cook the pancakes on a heated pan with a little bit of oil for about 2-3 minutes on each side
- Serve with a sliced figs
