Figs and Hemp Protein Pancake Recipe


  • 1 cup coconut flour
  • ¼ cup gluten-free flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 2 tablespoons hemp protein powder
  • 1 teaspoon vanilla extract
  • 1 cup coconut milk
  • ½ cup brown sugar
  • 3 tablespoons vegetable oil
  • 3 oz. fresh figs


  • In a bowl, mix the dry ingredients: coconut flour, gluten-free flour, baking powder, pinch of salt and hemp protein powder
  • Mix in the vanilla extract, coconut milk and vegetable oil
  • Cook the pancakes on a heated pan with a little bit of oil for about 2-3 minutes on each side
  • Serve with a sliced figs
