Chocolate and Chia Protein Cookie Recipe

Ingredients

  • 1 tablespoon of ground flax seeds + 3 tablespoons of water
  • 1 cup of quick oats
  • 1 cup of chopped banana
  • 1 cup of oat flour
  • ¼ cup organic chia protein
  • ½ cup of peanut butter
  • ½ cup of chocolate chips
  • ⅓ cup coconut sugar
  • 2 tablespoons non-dairy milk
  • 2 tablespoons maple syrup
  • ⅔ cup unsweetened cocoa powder
  • ¼ teaspoon salt

Method

  • Preheat the oven to 350 degrees Fahrenheit.
  • Make a flax egg by mixing 1 tablespoons of ground flax seeds with 3 tablespoons of water. Put it in the fridge for 15 minutes.
  • In a mixing bowl, mash the banana.
  • Add the rest of the ingredients, along with the flax egg once it’s done.
  • Mix well until you get a cookie dough consistency.
  • Line a tray with parchment paper or use a silicone mat.
  • Place the dough into cookie shapes on the tray. They won’t expand so flatten them out with your hands.
  • Bake for 22-25 minutes. Then let cool for 30 minutes.
  • Enjoy!
