Vanilla and Hemp Protein Cupcake Recipe

Ingredients:

  • 1 cup coconut flour
  • ½ cup almond flour
  • 2 tbsp hemp protein powder
  • A pinch of salt
  • 2 tsp baking powder
  • 1 cup coconut milk
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • ½ cup melted coconut oil
  • A zest of ½ lemon
  • ½ cup butter (for the frosting)
  • 1 teaspoon vanilla extract (for the frosting)
  • ¼ cup powdered sugar (for the frosting)
  • 6 tablespoons whipped aquafaba (for the frosting)

Directions:

  • Preheat the oven to 350 F
  • In a bowl, mix the coconut and almond flour, hemp protein powder, pinch of salt and baking powder
  • Mix in the vanilla, coconut milk, sugar, melted coconut oil and the zest of half a lemon then mix
  • Scoop the batter into muffin cups
  • Bake for about 15 minutes.
  • Let them cool completely.
  • In a bowl, beat in the butter with vanilla extract and powdered sugar and whip everything together with the aquafaba
  • Transfer the frosting into a piping bag fitted with star tip and frost the cupcakes
  • Decorate with hazelnut crunch if desired
