Ingredients
- 1 cup white coconut flour
- 2 tablespoon pea protein
- 2 cups of dried coconut
- 2 tablespoons of dried coconut (for coating)
- 1/4 cup 100% pure maple syrup
- 3 tablespoons of coconut oil
- 1/4 cup of goji berries
- Pinch of salt
Directions
- Add all ingredients (except the goji berries and 2 tablespoons of dried coconut) into a food processor and process until smooth
- Add the goji berries and mix until everything is well combined
- Form into one inch sized balls and roll each one in dried coconut for coating
- Place balls in the fridge to set for about 30 minutes
