Chocolate, Nuts and Pea Protein Muffin Recipe

Ingredients:

  • 1 cup ground almonds
  • ½ cup coconut flour
  • ½ cup cocoa powder
  • ½ tsp salt
  • 2 tbsp pea protein powder
  • ½ cup coconut sugar
  • ½ cup lukewarm water
  • 1 tsp vanilla extract
  • ½ cup soy milk
  • 3 tbsp vegetable oil
  • 1/3 cup chopped walnuts
  • 1/3 cup chocolate chips

Directions:

  • Preheat oven to 350 F
  • In a bowl, whisk with wire whisk the ground almonds, coconut flour, cocoa powder, salt, pea protein powder and sugar
  • Mix in the water, vanilla, soy milk and oil
  • Place the batter in a greased muffin tin and top each muffin
  • with chopped walnuts and chocolate chips
  • Bake for about 20 minutes, or until a toothpick comes out clean
