Ingredients:
- 1 cup ground almonds
- ½ cup coconut flour
- ½ cup cocoa powder
- ½ tsp salt
- 2 tbsp pea protein powder
- ½ cup coconut sugar
- ½ cup lukewarm water
- 1 tsp vanilla extract
- ½ cup soy milk
- 3 tbsp vegetable oil
- 1/3 cup chopped walnuts
- 1/3 cup chocolate chips
Directions:
- Preheat oven to 350 F
- In a bowl, whisk with wire whisk the ground almonds, coconut flour, cocoa powder, salt, pea protein powder and sugar
- Mix in the water, vanilla, soy milk and oil
- Place the batter in a greased muffin tin and top each muffin
- with chopped walnuts and chocolate chips
- Bake for about 20 minutes, or until a toothpick comes out clean
