Chocolate and Chia Protein Pancake Recipe

Ingredients:

  • ½ cup coconut flakes
  • ½ cup gluten free flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 2 tablespoons chia protein powder
  • pinch of salt
  • 1 teaspoon vanilla extract
  • ½ cup water
  • ½ cup sugar
  • 3 tablespoons vegetable oil
  • Juice of ½ orange
  • Zest of ½ orange
  • Melted chocolate for drizzling

Directions:

  • In a bowl, mix together coconut flakes, gluten free flour, cocoa powder, baking powder, chia protein powder and pinch of salt 
  • Mix in the vanilla extract, sugar, water, vegetable oil, juice and zest of an orange 
  • In a frying pan, heat up some oil and cook the pancakes on each side for about 2-3 minutes on medium heat 
  • Drizzle melted chocolate on top
