Ingredients:
- ½ cup coconut flakes
- ½ cup gluten free flour
- 3 tablespoons cocoa powder
- 1 teaspoon baking powder
- 2 tablespoons chia protein powder
- pinch of salt
- 1 teaspoon vanilla extract
- ½ cup water
- ½ cup sugar
- 3 tablespoons vegetable oil
- Juice of ½ orange
- Zest of ½ orange
- Melted chocolate for drizzling
Directions:
- In a bowl, mix together coconut flakes, gluten free flour, cocoa powder, baking powder, chia protein powder and pinch of salt
- Mix in the vanilla extract, sugar, water, vegetable oil, juice and zest of an orange
- In a frying pan, heat up some oil and cook the pancakes on each side for about 2-3 minutes on medium heat
- Drizzle melted chocolate on top
