Chocolate and Chia Protein Cupcake Recipe

Ingredients:

  • 1 cup gluten free flour
  • 1 cup almond flour
  • 3 tbsp cocoa powder
  • 2 tbsp chia protein powder
  • A pinch of salt
  • 2 tsp baking powder
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 tsp instant coffee
  • ½ cup vegetable oil
  • 1 cup almond milk
  • 5 oz. dark chocolate (for the icing)
  • 2 tablespoons coconut oil (for the icing)
  • ¼ cup almond milk (for the icing)

Directions:

  • Preheat the oven to 350 F
  • In a bowl, mix well the dry ingredients: gluten free flour, almond flour, baking powder cocoa powder, chia protein powder, salt and brown sugar
  • Add in the vanilla, coffee, vegetable oil and almond milk and mix
  • Place the batter in muffin cups and bake for about 15 minutes
  • In the microwave, melt the chocolate, coconut oil and almond milk together
  • Let it set for two hours then transfer the set chocolate icing into a piping bag fitted with a star tip and decorate the cupcakes
  • Sprinkle as desired
