Chocolate and Chia Protein Muffin Recipe


  • 1 cup almond flour
  • ½ cup gluten-free flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • 2 tbsp chia protein powder
  • ½ tsp salt
  • Zest of ½ lemon
  • ½ cup water
  • ½ cup almond milk
  • 1 tsp vanilla extract
  • 3 tbsp canola oil
  • ½ cup dark brown sugar


  • Preheat oven to 350 F
  • In a bowl, mix the almond flour, gluten-free flour, cocoa powder, baking powder, protein powder and salt
  • Whisk with a wire whisk and add in the zest of the lemon, water, milk, vanilla, oil and sugar
  • Mix everything together and scoop out from the batter into well-greased muffin tin with oil
  • Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean
