Applesauce and Pea Protein Cookie Recipe

Ingredients:

  • 1 ½ cup of almond flour (blanched)
  • ½ cup of organic pea protein
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons of flax seeds
  • 6 tablespoons of water
  • 1 cup of unsweetened applesauce 
  • ¼ cup of melted coconut oil 
  • 1 cup coconut or brown sugar 
  • ½ cup dried cranberries or raisins
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Directions:

  • Preheat the oven to 350˚F
  • Line a baking sheet with parchment paper
  • In a medium bowl, mix together the almond flour, pea protein, baking powder, and salt
  • In a small bowl, mix together the flax seeds and water
  • In a large bowl, mix together the applesauce, coconut oil, sugar, dried cranberries
  • Add the flax seeds mixture, cinnamon and vanilla extract, then mix
  • Add the dry ingredients to the wet ingredients, and mix until the dough comes together
  • Using floured hands, form a  shape that's about 12 inches
  • Using a knife, slice cookies at about 2 ½ -3 inch thick
  • Place on the prepared baking sheet
  • Bake for 15 -20 minutes, or until lightly golden brown
